Is it summer yet? I don’t know about where you live but where I live the weather is being REAL dumb. It always is though… Ah, Oklahoma! I would love you so much more if you could get your weather act together. And if you had mountains. Or a beach. Or trees. Or really anything to do outside. OK OK all you Okies don’t freak out! I love OKC so so much but I think we can all agree that the weather is less than ideal and we would all enjoy a little more to do outside.

Since that little rant is out of the way I think I’ll get back to the point of this! One of the reason I’m ready for summer is because I’m ready to drink smoothies every day and stop making eggs for breakfast. Listen, I like eggs, I do, but I just don’t feel like making them every single day! Sometimes I just want to throw some ingredients in a blender and call it good!

Actually what I really want is to stop at one of my favorite smoothie places and buy one but, like, I’m not a millionaire so I can’t. Speaking of favorite smoothie places - if you live in OKC (or if you ever visit, and despite the rant above, you really should because it’s super cool), you NEED to go get yourself a smoothie at Wheeze the Juice AND Organic Squeeze. Please note that I said “and” not “or,” it’s important that you go to both. But maybe on different days. Unless you’re just reeeeally feeling smoothies one day - I’m not judging. When you go to Wheeze the Juice just know that my favorite is the “Camp Anawana” (with no honey). At Organic Squeeze I’m loving “Cocoa Cashew Swirl” and “Muscle Westbrook.”

Oh and speaking of Organic Squeeze - did any of you watch the documentary “Fat. Sick and Nearly Dead,” ?? If you did you’ll noticed OS has the “Joe’s Mean Green Juice,” as in Joe from the documentary. I think that’s a pretty fun fact! They also have an app so you can order from your phone and just pick it up! THAT DAMN APP HAS COST ME SO MUCH MONEY!!! Totally worth it though (sorry, babe!).

So if you’re like me and you’re trying to save a few dollars by making a smoothie at home I’m about to share with you the recipe for the best blueberry + nut butter smoothie, like, ever. Trust me, I’ve tried a lot of smoothies. A lot, a lot. This recipe is so delicious and SO easy and honestly you can just trade out ingredients for whatever you like/have on hand! The original recipe has chia seeds and flaxseed meal in it but I don’t like adding chia seeds to smoothies because they get stuck in my teeth and I don’t have any flaxseed meal (thanks to the short-lived mouse problem we had, but let’s not talk about that).

Here’s what you need: a blender, blueberries, nut butter, milk of some sort (or water if you’re one of those people), bananas and whatever protein powder you love!

Can we talk about my blender for a second? Previously I was using an older KitchenAid blender that my sister let me keep (thanks, Jess!) and while I’m super thankful for her letting me basically steal it from her, well, it sucked. I would have to turn it on and off so many times and stir up whatever was in it so that it would blend. I’m not kidding, it would take me 20 minutes to make a smoothie. Aint nobody got time for that (thanks for bringing that phrase back into my life, Sarah’s Day). Y’ALL! 20 MINUTES! I eventually just stopped trying and then Matt, being the thoughtful gift giver he is, got me a new blender for Christmas! Woohoo! Now I can make all the smoothies I could ever want! I think I’ve only made 3 since Christmas but it’s been cold so that doesn’t count as an indication of future use. This is the smoothie I’ve been making and it is freaking delicious.

Step ONE - gather your ingredients for an instagram pic (you know you want to). Just be quick so your frozen goodies don’t melt!

Step TWO - put the ingredients in the blender so that you can actually make your smoothie.

Step THREE - blend

Step FOUR - pour + take another pic

Step FIVE - enjoy the fruits of your labor and tag me in your insta photo ;) @katelynswanson

* use whatever milk you want! I prefer unflavored almond milk from Trader Joe's. If you don't use frozen berries + banana your smoothie won't be as thick! I'm finishing up my vital proteins and then I think I'm going to give Tropeaca protein a try - use whatever you want! I usually end up just grabbing a soup spoon and getting a ton of peanut butter but you know... you do you! OH and you can use whatever you want instead of "maca," I just like that way it tastes and it's what I have!
